About Tea

Amazingly, all varieties of tea grow on a single plant, Camellia sinensis. Tea may be classified into three broad categories-green, oolong, and black-based on the methods by which it is processed. These categories are further expanded by such factors as the stage of plant growth at which the tea is picked and in what locality the tea plant grows. Each of these factors dramatically affects the characteristics of the tea, including its appearance, color, aroma, flavor, and medicinal qualities. Ultimately, thousands of varieties are born of the single tea plant!

In addition to the “true” teas, a term which is properly reserved only for drinks prepared from Camellia sinensis, there are still more beverages which are classified as tisanes or “herbal infusions.” The preparation is similar, but rather than using tea leaves, tisanes are made by steeping assorted herbs, spices, and flowers in water.

Some wonderful beverages can be made using a blend of various teas and herbs. Complementary mixtures combine the best characteristics of the ingredients, allowing the creation of blends perfectly suited to your own taste and which promote your individual sense of well-being.
